This exciting project brings the viral mac & cheese concept to Minnesota for the very first time, introducing the brand to one of the country’s most recognizable retail destinations.
Located on the third floor of the Mall of America, the new restaurant represents another example of Strack Construction partnering with growing national brands to create memorable customer experiences.

Roni’s Mac Bar has built a strong national following through its customizable comfort food concept and strong social media presence. Known for creative mac & cheese bowls, grilled cheese sandwiches, and loaded menu options, the brand continues expanding into new markets across the country.
This new Mall of America location marks the company’s first entry into Minnesota. Because of the visibility and traffic generated by the mall, the project creates an exciting opportunity to introduce the concept to a completely new audience.

Project Update: Chipotle Builds are in Full Swing!
A couple of months ago, we shared news about our two ongoing Chipotle projects, and today we’re excited to share a progress update!
📍 Lexington, MN
Construction at the Lexington site is in full swing. The underground water retention system is in place, building long-term functionality into the site. On the inside, the framing, utilities, and initial finishes are advancing rapidly, aiming for a November completion. Once wrapped, this Chipotle with the highly popular Chipotlane drive-through experience will be ready to serve the community at the Northway Shopping Center.
📍 Winona, MN
At the Winona Chipotle, sitework is nearing completion, paving the way for polished, accessible outdoor spaces. Our teams are progressing steadily with the interior build-out, targeting an October completion to bring another modern Chipotle with Chipotlane to the Winona area.
We’re proud to continue partnering with Chipotle on these high-traffic, community-serving builds, bringing both locations to life on schedule and on budget.

Breaking New Ground in Grand Forks!
After a successful 2024 build for the “Dakota Spicy Cluckers” in Fargo, Strack Construction is thrilled to kick off our second Dave’s Hot Chicken project in North Dakota. This time, we’re bringing the heat to the newly renovated Southtowne Mall in Grand Forks with a 3,500-square-foot tenant improvement.
From early fly-in site investigations, including some assistance from a Project Manager in training, to meticulous sub-trade selection, our team has laid the groundwork to ensure our client receives accurate budgets, realistic schedules, and a smooth construction process.
We’re proud to maintain our strong relationship with this multi-unit operator. We have assembled a top-notch crew to get the job done and we continually add our acclaimed value to every project. With precision planning and collaboration at every step, we’re on track to have this project wrapped up by the end of October.

We recently wrapped up an exciting project in Corcoran, a brand-new Domino’s Pizza location for Team Honey Badger | Domino’s on what was once a tired old corner lot. It’s always rewarding to bring new life into underutilized spaces, and this redevelopment was no exception.
Domino’s started serving up their delicious fare at the end of May, and the response from the community has been fantastic.
We are very thankful for the incredible work the team put into making this project a success. From planning to punch list, it’s always a group effort, and we’re grateful to the design team, THIELEN & GREEN and Westwood Professional Services, the subcontractors, and the partners who helped bring it to life.

Wingstop #100 is officially open for OM Group in Waite Park, MN!
We’re proud to celebrate another major milestone with an incredible brand partner. This marks our second 100th Wingstop Restaurants Inc. location opening for two different partners, and we’re just as honored this time around.
Huge congrats to Brian Mannis and the entire OM Group team. From 9 locations to 100 in less than five years, what a ride! We’re thrilled to have played a small part in building toward this record-breaking day.

Double the Progress, Double the Burritos!

📍 Winona, MN
We kicked off construction in late May after removing two existing residential structures to make way for this new addition. Our crews have been moving quickly — the building is already fully framed and ready for roofing. Progress is moving right on schedule, and we’re excited to see this one take shape.
📍 Lexington, MN
At the Northway Shopping Center, a brand-new outlot development is underway and will soon be home to another Chipotle Mexican Grill with Chipotlane. Despite a wet and challenging summer, our crews are staying focused and working ahead of schedule with a targeted completion before Thanksgiving.
Shout-out to our field teams, partners, and everyone involved in making these high-traffic retail builds a success. Stay tuned to see these two locations come to life!
Grand Opening Alert!
We’re proud to celebrate the grand opening of our MN Chicken’s 5th Dave’s Hot Chicken, now open at 1620 Broadway Ave South in Rochester, MN! This is our 6th Dave’s Hot Chicken build in total.
This project was all about precision and hustle, and thanks to careful planning, a dedicated site superintendent, and an all-star lineup of subcontractors, we brought this busy location to life in just 11 weeks.

Congratulations to OM Group on the grand opening of their 8th Minnesota Wingstop—another successful build by the Strack Construction team! This is our 14th Wingstop build in total with many more to come!
Located on Glen Lane in Eden Prairie, MN, this new carry-out and dine-in Wingstop is open and serving up the flavor—thanks to our team who absolutely crushed the schedule on this one.
Despite some unexpected structural curveballs, we delivered this tenant improvement project from demolition to Certificate of Occupancy in just 8.5 weeks!
We credit this win to our rockstar Project Manager, sharp Superintendents, and the skilled subcontractors who bring it all together.
And we’re not slowing down, more Wingstops are underway in Blaine, Woodbury, Crystal, Hopkins, Eagan, and Waite Park! With all of these new locations, there is a good chance one will be joining your city!

The new Mister Car Wash is officially up and running!
Exciting news in Eden Prairie! The new Mister Car Wash is officially up and running, and it’s already one of the busiest stores in the region, processing 140+ vehicles an hour!
This awesome new facility is a fantastic example of innovation and sustainability in action. Here are a few highlights that make this location truly stand out:
🔷 Geopier Foundation: Due to the unique soil conditions in the area, the building is supported by aggregate piers (Geopiers), which help ensure stability and support for the long-term durability of the structure.
🔷 Water Conservation: Mister Car Wash is committed to sustainability with a reclaim system that allows the reuse of water, reducing overall consumption and minimizing environmental impact.
🔷 Stormwater Management: The new location features an advanced stormwater filtration system, which not only helps collect and manage stormwater but also repurposes it for irrigation, making the site more eco-friendly.
